Move over, green beer. Here are three cocktail recipes to celebrate St. Patrick's Day with style.

2 oz Knappogue Castle 12 Year Old Irish Whiskey
0.75 oz Lillet Ros�
0.5 oz Aperol
2 slices Muddled Cucumber slices
1 pinch Kosher salt

Glass: Cocktail
Garnish: Skewered Cucumber Ribbon w/ 1 drop Rose Water
Method: Muddle lightly. Stir. Double-Strain.

1.75 oz Slane Irish Whiskey
.5 oz Demerara simple syrup (2:1, sugar to water)
2.5 oz hot strong brewed coffee
1 oz cream float*

Slane Irish Whiskey offers a new take on Ireland's legendary spirit. Created by Brown-Forman, a leader in whiskey since 1870, and the Conyngham family of Slane, whose roots in the Irish village date back more than three centuries, it unites craftsmanship and innovation.

Its signature Triple Casked maturation process uses virgin oak, seasoned oak and sherry casks to produce a smooth spirit and more robust flavor than traditional blended Irish whiskeys.

On the nose, complex fruit with drizzles of caramel, butterscotch and vanilla; brown spice and toasted oak. On the palate, it is spicy at first, but quickly sweetened with rich caramel, vanilla and butterscotch atop a deep layer of dried fruit, with a finish hinting at dried fruit and caramelized sugar.

2 oz Knappogue Castle 12 Year Old Irish Whiskey
0.25 oz Wildflower Honey Syrup (2 parts honey : 1 part water)
1 tsp Bigallet Thyme Liqueur OR Thyme Syrup

Glass: Julep
Ice: Crushed
Garnish: Mint sprigs and Thyme sprigs, spanked & inserted right next to straw
Method: Rub 6-8 mint leaves in Julep cup. Add all liquids and swizzle to incorporate. Fill 2/3 with crushed ice and swizzle for 30 seconds. Top with more crushed ice until mounding over top of cup.

"You've gotta have mint in a julep, but thyme's savory edge adds tremendous depth to this honey-laced tipple without overpowering Knappogue's fruity and confectionery notes," says Sim�. "Just the thing to raise as your horse enters the home stretch."
